Ingredients
- Momo dough, rested300 g
- Crumbled paneer1.5 cups
- Onion, finely chopped1/2 cup
- Coriander and green chilli1/3 cup
- Toasted cumin powder1 tsp
- Oil for brushing2 tsp
Method
Season the paneer
Toss crumbled paneer with chopped onion, coriander, green chilli and toasted cumin until everything is evenly speckled. Add salt only at the end so the onion does not weep and loosen the mixture.
Roll and fill
Roll the dough into thin three-inch rounds and place a heaped spoon of paneer slightly off-centre. Keep edges clean and unfloured so they grip when you seal them.
Shape half-moons
Fold each disc into a half-moon and press the curved edge into tight crimped pleats. Run a wet fingertip along the seam first to lock the filling inside.
Hydrate the surface
Brush the shaped momos with a thin film of oil and mist them with water on all sides. The moisture lets the skins steam-cook before they brown.
Air-fry until set
Lay them in a single layer and air-fry at 185C for 12 minutes, flipping gently after seven minutes. The paneer should be hot and the wrappers soft with lightly toasted edges.
