Himachali Muda (Roasted Grain Mix)
A crunchy mix of roasted grains and walnuts in the spirit of the muda shared at Budhi Diwali in Sirmaur and Kullu. Traditional muda also uses wheat or maize and is roasted in a pan or hot sand; this is an air-fryer version.

Ingredients
- Black chana (kala chana), soaked overnight1/2 cup dry
- Soybeans, black, soaked overnight1/2 cup dry
- Walnuts, halved1/2 cup
- Oil1 tbsp
- Salt1 tsp
- Red chilli powder1/2 tsp
Method
Boil the soaked grains
Drain the soaked chana and soybeans. Pressure cook them together in fresh water for 3 whistles, or boil in a covered pot for 45 to 60 minutes, until a soybean squashes easily between your fingers. Soybeans must always be fully cooked before roasting, so do not skip or shorten this step.
Dry them well
Drain and spread the grains on a clean towel for 15 minutes, patting them dry. Wet grains steam instead of roasting, so the drier they are, the crunchier they turn out.
Season
Toss the dry grains with oil, salt and chilli powder in a bowl until every piece looks lightly coated.
Prepare the basket
Spread the grains in the basket in a thin, even layer. Do two batches if your basket is small, as a crowded basket roasts unevenly.
Roast with walnuts
Air-fry at 180°C for 25 min, shaking the basket every 5 min, and add the walnuts for the final 4 minutes. The grains are done when they sound hard and dry when shaken. Cool fully, as they crisp up further, then store in an airtight jar.
