Ingredients

  • Soaked yellow moong dal1 cup
  • Grated ginger1 tsp
  • Chopped spinach1/3 cup
  • Green chilli, minced1 small
  • Coriander chutney3 tbsp
  • Sweet yogurt1/2 cup

Method

  1. Blend the batter

Grind the soaked moong dal with the ginger and a little water into a smooth, thick pour. Stir in salt, the minced green chilli and chopped spinach, which add colour, a gentle heat and fresh bite.

  2. Portion into rounds

Spoon the batter into small coin-sized rounds on a lined, oiled tray that fits your basket. Keeping them small helps them cook through fast and crisp right up at the thin edges.

  3. Brush the tops

Lightly brush each chilla with oil so both faces turn golden in the dry heat of the basket. A thin coat is all you need for a crackly edge, since too much just leaves them greasy.

  4. Dress the bites

Once cooked, set out the chillas and dab each with coriander chutney and a swirl of sweet yogurt. The cool yogurt and fresh chutney lift the earthy moong and turn the bites into a light chaat.

  5. Air-fry the chillas

Slide the tray into the basket and air-fry at 190C for 13 min, flipping once for even browning. They are ready when set right through and golden and firm at the edges, holding together when lifted.
