Method
Make the filling
Boil and mash the potato, then let it cool a little so it is not steaming wet. Mix in the grated carrot, chopped onion, cumin and turmeric with a pinch of salt until even. Drier filling shapes cleanly and will not soak the wrap.
Shape and crisp
Press the mix firmly into four even logs so they hold together. Air fry at 180°C for 11 minutes until the outside is set and lightly browned. Firming them first stops the logs cracking apart when you roll them up.
Wrap
Place a log on a warm tortilla, scatter over a little onion, and roll it up into a tight wrap with the ends tucked under. Warming the tortilla first makes it bend without cracking, and a tight roll holds its shape while it crisps.
Toast to finish
Set the roll seam side down and air fry at 180°C for 6 min until the tortilla is crisp and golden and the filling is hot through. Placing the seam down first seals it so the wrap does not unroll in the basket.
