Ingredients
- soya chunks200 g, soaked and minced
- boiled potato, mashed1 medium
- ginger garlic paste1 tsp
- garam masala1 tsp
- roasted gram flour2 tbsp
- fried onion2 tbsp
- ghee1 tbsp
Method
Prepare the mix
Soak the soya chunks in hot water for 10 min, then drain and mince them finely. Mix with the mashed potato, ginger garlic paste, garam masala and fried onion. A fine mince gives the smooth, soft texture galouti is known for.
Bind
Add the roasted gram flour to bind the mixture, mix well and rest it for 15 min. The gram flour soaks up extra moisture and holds the soft mix together, so the patties do not crack or fall apart while cooking.
Shape
Shape the mixture into small, flat patties about 5 cm wide. Keep them even and not too thick, because thin patties cook through and firm up evenly without staying soft and raw in the middle.
Air fry
Preheat the air fryer to 180°C. Brush the patties with ghee and lay them in the basket in a single layer, then air fry at 180°C for 14 min, flipping once, until golden brown and firm. The ghee helps them brown and crisp.
