Ingredients
- black beans300 g cooked
- corn60 g kernels
- breadcrumbs50 g
- onion1 small
- cumin powder1 tsp
- chilli powder1/2 tsp
- oil1 tbsp
Method
Mash the beans
Use cooked, well-drained black beans and mash most of them in a bowl, leaving a few whole for bite. Drain them really well first, because wet beans make a loose mix that will not hold a patty shape.
Mix the patty base
Add the corn, breadcrumbs, finely chopped onion, cumin powder and chilli powder, then mix until it just holds together. If it feels wet, add a little more breadcrumb so the patties stay firm in the basket.
Shape the patties
Form the mixture into six even patties and press each one firm and flat. Brush both sides with oil, which helps the outside crisp and colour instead of drying out in the hot air.
Air fry
Air fry at 190°C for 15 min, flipping halfway so both sides brown evenly. They are ready when the outside is firm and crisp and holds together when lifted with a spatula.
