Ingredients
- rajma2 cups boiled
- boiled potato1 medium
- breadcrumbs1/2 cup
- green chilli2 chopped
- garam masala1 tsp
- oil1 tbsp
Method
Mash the base
Mash the boiled rajma and potato together while still warm, keeping a few whole beans for bite. Warm mash binds far better, and leaving some beans whole stops the tikki turning into a dense paste that cooks unevenly.
Season the mix
Mix in the chopped green chilli, garam masala, a pinch of salt and half the breadcrumbs. The crumbs soak up the extra moisture so the dough holds its shape, which is what keeps each tikki from cracking as it cooks.
Shape the tikki
Press the mix into round, even patties, then coat each one in the rest of the breadcrumbs and brush lightly with oil. An even thickness cooks at one pace, and the dry crumb shell is what crisps into a golden crust.
Air-fry both sides
Place the patties apart in a single layer so hot air reaches every side, then flip once halfway so both faces set and brown evenly. Air-fry at 185°C for 16 min until the tikki are crisp and deep golden.
