Ingredients

  • Chickpeas, boiled or canned200 g
  • potato1 medium
  • parsley3 tbsp
  • garlic2 cloves
  • cumin powder1 tsp
  • gram flour2 tbsp

Method

  1. Mash

Boil the potato until soft and mash it smooth. Mash the chickpeas roughly, leaving a little texture, then mix both together. The soft potato binds the drier chickpeas into a workable dough.

  2. Season

Add the chopped parsley, grated garlic, cumin powder, salt and gram flour to the mash. The gram flour soaks up moisture and binds the mixture so the koftas hold their shape and do not spread.

  3. Shape

Roll the mixture into small logs and press each one firmly between your palms. Packing them tight stops them from cracking or falling apart in the basket while they cook.

  4. Brush

Brush the koftas lightly all over with a thin coat of oil for an even golden colour. A light, even film helps them brown all around instead of drying out in patches.

  5. Air fry

Cook at 185°C for 18 min, turning them once halfway for even colour. They are ready when they feel firm to the touch and look golden brown all over with a light crust.
