Ingredients
- Grated mixed veg2 cups
- Plain flour4 tbsp
- Cornflour2 tbsp
- Soy sauce2 tbsp
- Garlic-ginger paste1 tbsp
- Spring onion1/3 cup
Method
Form the balls
Squeeze the excess water from the grated vegetables, then bind them with the flours, garlic-ginger paste and salt into a stiff mix. Roll into walnut-sized balls that hold when pressed, since a dry, firm mix keeps them from breaking.
Crisp the dumplings
Mist the balls with oil and air fry at 190°C for 14 minutes, turning halfway so they colour all round. They should firm up into crisp, deep-golden bites that no longer feel soft or squashy in the middle.
Simmer the gravy
In a wok, sizzle a little garlic, then add the soy sauce, a teaspoon of cornflour slurry and water. Cook until the sauce turns glossy and just thick enough to cling, so it coats the bites rather than pooling around them.
Coat and finish in the air fryer
Toss the crisp balls in the gravy with the spring onion, then air fry at 190°C for 5 min. The dumplings drink up the sauce for a fuller flavour while a short blast keeps their edges crackly, not soggy.
