Ingredients
- paneer300 g crumbled
- onion1 finely chopped
- tomato1 finely chopped
- turmeric1/2 tsp
- red chilli powder1/2 tsp
- oil1 tbsp
Method
Squeeze the tomato
Chop the tomato fine, then squeeze out the extra juice before adding it in. Less water means the bhurji bakes to a dry, fluffy crumble instead of turning into a wet, soft mush in the tray.
Mix the bhurji
Toss the crumbled paneer with onion, squeezed tomato, turmeric, chilli powder, oil and salt until the colour is even. Fresh paneer crumbled by hand keeps a soft, moist bite once baked.
Fill the tray
Press the mix into a greased air-fryer-safe tray in a thin, even layer. A flat, level layer cooks through at the same rate, so the top browns just as the onion below turns soft and sweet.
Bake until set
Stir the mix once midway so it heats evenly and no patch stays raw. Cook until the top is golden and the bhurji is hot through and set. Air-fry at 180°C for 15 min.
