Ingredients

  • kulcha dough1 ball
  • paneer120 g
  • onion1 small
  • green chilli1
  • coriander2 tbsp
  • butter1 tbsp

Method

  1. Make the filling

Crumble the paneer and mix it with the chopped onion, green chilli and coriander. Squeeze out any water from the onion first, since a dry filling keeps the kulcha from turning soggy in the middle.

  2. Stuff the dough

Flatten the dough ball into a small disc, spoon the filling into the centre and pinch the edges up to seal it back into a ball. Seal it well so the stuffing stays in and does not burst out when rolled.

  3. Roll it out

Gently roll the stuffed ball into a flat round, pressing lightly and evenly so the filling does not tear through. Brush the top with butter, which browns in the heat and adds a soft, rich finish.

  4. Air fry

Air fry at 180°C for 10 min until the kulcha puffs a little and turns golden with light brown spots. Those brown spots mark where the surface has crisped, giving the kulcha its bakery-style look.
