Ingredients

  • potato4 medium
  • onion1 small
  • peas1/2 cup
  • green chilli2
  • cornflour3 tbsp
  • breadcrumbs1 cup

Method

  1. Make the filling

Boil and mash the potato, then let it steam dry for a few minutes so it is not wet. Fry the chopped onion, peas and green chilli until soft and mix them into the mash with salt. Drier mash holds its shape and crisps better.

  2. Shape

Divide the mix into equal portions and press each into a thick, round patty with smooth edges. Firm them together well with no cracks, since gaps let the coating seep in and can make the chop break apart while cooking.

  3. Coat

Whisk the cornflour with a little water into a thin slurry. Dip each patty to coat it, then press it firmly into the breadcrumbs on all sides. The slurry glues the crumbs on so they form a crunchy shell instead of falling off.

  4. Rest and spray

Chill the coated patties for 10 minutes, then mist both sides with oil. The rest firms up the crumb layer so it stays put, and the film of oil is what turns the coating deep golden and crisp in the dry heat.

  5. Air fry

Air fry at 180°C for 12 min, turning once halfway so both faces brown evenly. They are ready when the crust is golden and crisp and the centre is piping hot. Rest for a minute before serving so the shell sets.
