Ingredients
- mushroom250 g, finely chopped
- chana dal1/2 cup, boiled and mashed
- ginger garlic paste1 tbsp
- roasted gram flour2 tbsp
- garam masala1 tsp
- mace powder1/4 tsp
- oil2 tbsp
Method
Cook the mushroom
Cook the chopped mushroom in a dry pan on low heat until all the water dries up and the pan looks dry. Mushrooms hold a lot of moisture, and drying it off now stops the patties turning soggy and falling apart later. Cool completely.
Mix the patty dough
In a bowl mash the boiled chana dal smooth. Add the cooked mushroom, ginger garlic paste, roasted gram flour, garam masala, mace powder and salt. Mix into a soft dough. The roasted gram flour soaks up stray moisture and binds it all together.
Shape the patties
Divide the mix into equal portions and press each into a flat round patty about 1.5 cm thick. Keeping them the same size and thickness means they all cook through at the same rate, so none stays raw in the middle.
Oil and arrange
Brush both sides of each patty with oil and lay them in the basket in a single layer with gaps. A thin, even film of oil is what turns the surface a deep golden, while the gaps let hot air crisp every edge.
Air fry until firm
Cook at 180°C for 8 min, flip gently, then cook for another 7 min. The patties are done when they feel firm to the touch and are dry and lightly browned on both sides, about 15 min total at 180°C.
