Ingredients

  • halloumi300 g
  • olive oil1 tbsp
  • oregano1 tsp
  • garlic2 cloves
  • lemon juice1 tbsp
  • black pepper0.5 tsp

Method

  1. Cube

Cut the halloumi into even cubes about two and a half centimetres wide. Keeping them the same size means they all brown at the same rate, and cubes this big hold together on the skewer without crumbling in the heat.

  2. Coat

Toss the cubes gently with the olive oil, oregano, grated garlic, lemon juice and black pepper. Handle them lightly so they keep their shape, and let the oil carry the herbs onto every face for even flavour and colour.

  3. Thread

Slide the cubes onto skewers, leaving small gaps between each piece. Those gaps let the hot air reach all sides so every face can brown, where cubes pushed tight together would stay pale and soft where they touch.

  4. Preheat

Let the air fryer warm up to 180°C for a few minutes before adding the skewers. A hot basket sears the halloumi the moment it goes in, setting a golden crust instead of letting the cheese slowly soften and weep.

  5. Air fry

Air fry at 180°C for 12 min, turning once halfway, until the halloumi is golden and lightly crisp at the edges. Turning it once keeps every side even, so no face sits pale against the floor of the basket.
