Ingredients
- soya granules1.5 cups
- tortilla4
- onion1
- ginger garlic paste1 tbsp
- garam masala1 tsp
- gram flour3 tbsp
Method
Make the mix
Soak and squeeze the soya granules until dry, then mix them with the ginger garlic paste, garam masala and gram flour to bind. Squeezing out the water and adding gram flour gives a firm mix that holds its shape as a seekh.
Shape seekh
Press the mix into firm seekh logs, packing them tightly with no gaps. Air fry at 185°C for 13 minutes, turning once, until browned and cooked through. Firm packing stops the logs cracking as they cook.
Roll
Place a hot seekh on a warm tortilla with some sliced onion. Roll it up tight and hold the seam side down. A snug roll with the seam underneath keeps the wrap closed so it does not spring open when you crisp it.
Crisp to finish
Air fry the wrap at 185°C for 5 min until the tortilla is crisp and golden and the seekh is hot through. The quick blast crisps the outside and seals the seam, giving you a firm wrap that holds together in the hand.
