Ingredients
- tofu350 g cubed
- yogurt100 g thick
- tandoori masala2 tbsp
- ginger garlic paste1 tbsp
- lemon juice1 tbsp
- oil1 tbsp
- bell pepper1 cubed
Method
Press the tofu
Press the tofu block under a weight for 10 minutes to squeeze out the water, then cut into cubes. Pressed tofu soaks up the marinade and firms up so the cubes hold their shape and char instead of crumbling.
Make the marinade
Whisk the yogurt, tandoori masala, ginger garlic paste, lemon juice and oil into a smooth, thick paste. A thick marinade coats the tofu in an even layer that dries into a proper tandoori crust.
Marinate
Add the tofu cubes and bell pepper to the marinade and toss gently to coat, then rest for 20 minutes. Handle the soft cubes lightly so they stay whole, and let them sit so the spice soaks in.
Skewer and air fry
Thread the tofu and pepper onto skewers and air fry at 200°C for 14 min, turning once, until the edges are charred and firm. Leave small gaps on the skewer so hot air chars every side.
