Ingredients
- paneer250 g
- butter2 tbsp
- tomato puree3 tbsp
- cashew paste2 tbsp
- kasuri methi1 tsp
- buns6 pieces
- cheese80 g
Method
Make the butter paneer base
Heat the butter in a pan, then add the tomato puree, cashew paste and kasuri methi. Cook on medium for 8 minutes, stirring often, until it thickens into a rich paste that coats the back of the spoon.
Add the paneer
Cut the paneer into small cubes and fold them into the thick masala. Cook for 2 minutes until each cube is well coated, then cool it a little so the hot filling does not tear the soft buns.
Stuff the buns
Slice each bun halfway through, keeping a hinge so it holds together. Spoon the thick paneer filling generously inside, pressing it in gently so every bite reaches right to the centre.
Top with cheese
Sprinkle grated cheese over the filling peeking out of each bun. As it melts it seals the top and forms a golden crust that keeps the paneer inside soft and moist.
Bake in the air fryer
Set the stuffed buns in the basket with a little space between them and air-fry at 185C for 6 min, until the cheese melts and the tops turn golden and crisp. The gaps let hot air brown every bun.
