Ingredients

  • potato4 medium (boiled, mashed)
  • green peas1/2 cup (boiled, lightly mashed)
  • ginger garlic paste1 tsp
  • red chilli powder1/2 tsp
  • bread crumbs1/2 cup
  • burger bun4
  • oil2 tbsp
  • onion1 (sliced)
  • tomato1 (sliced)
  • green chutney4 tbsp

Method

  1. Mix the tikki filling

Mash the boiled potato and peas together in a bowl. Add the ginger garlic paste, chilli powder and salt, then work in the bread crumbs until the mix holds together and is no longer sticky. The crumbs soak up moisture so the tikki stays firm.

  2. Shape the patties

Divide the mixture into 4 equal balls and flatten each into a round patty about 1.5 cm thick. Keep them even so they cook at the same rate, then brush both sides with oil to help them brown into a crisp golden crust.

  3. Air fry the patties

Place the patties in the basket in a single layer with space between them so the air can crisp every side. Air fry at 190°C for 12 min, flipping halfway, until they are golden brown and firm to the touch.

  4. Toast the buns and assemble

Split the buns and toast them cut side up at 190°C for 2 min until light golden, which stops them turning soggy under the filling. Spread chutney on both halves, add the tikki, onion and tomato, close the bun and serve hot.
