Ingredients
- tofu400 g
- breadcrumbs1 cup
- flour4 tbsp
- cornflour2 tbsp
- water4 tbsp
- salt1 tsp
Method
Press the tofu
Drain the firm tofu and press it under a weight for 10 minutes, then slice into thick slabs and season with salt. Pressing squeezes out water so the crumb crisps instead of turning soggy from the inside.
Crumb
Whisk the cornflour and water into a batter. Dip each slab in flour, then the batter, then the breadcrumbs. The flour helps the batter grip and the batter glues on a thick, even crumb that fries up crisp.
Air fry
Arrange the slabs in a single layer and spray both sides lightly with oil so the crust turns golden. The oil helps the dry crumb brown and crisp evenly instead of staying pale and powdery in patches.
Finish
Air fry at 190°C for 18 min, turning once, until the crust is crisp and golden brown all over. Turning once gives both sides equal colour so no face stays soft. Serve hot.
