Ingredients
- cauliflower1 medium head
- flour0.5 cup
- hot sauce3 tbsp
- butter1 tbsp
- garlic powder1 tsp
- salt1 tsp
Method
Cut the florets
Cut the cauliflower into even bite-sized florets so they cook at the same pace. Pat them dry too, because a dry surface lets the flour grip and crisp instead of turning gummy in the heat.
Coat lightly
Toss the florets with the flour, garlic powder and salt until lightly and evenly dusted. A thin coat is enough to form a crisp shell, while a heavy one just goes pasty and pale.
Air fry
Preheat to 195C, then air-fry the cauliflower for 14 minutes, shaking the basket halfway. The shake turns the florets so every side meets the hot air and browns evenly rather than sticking flat.
Make the toss
Melt the butter and stir it into the hot sauce in a large bowl. Warming the butter into the sauce makes a smooth coat that clings to the florets instead of pooling greasily at the bottom.
Toss and crisp
Toss the hot cauliflower through the buffalo mix, then air-fry at 195C for 8 min until the edges crisp up and brown. This second round dries the sauce onto the surface so it turns sticky, not wet.
