Ingredients
- soya chunks1 cup
- potato2
- breadcrumbs1 cup
- flour3 tbsp
- garlic3 cloves
- salt1 tsp
Method
Soak and mash
Soak the soya chunks in hot water for 10 minutes until soft, then squeeze them dry and chop fine. Squeezing out the water stops the mix turning mushy, and boiling and mashing the potato gives you the binder that holds it.
Form patties
Mix the chopped soya, mashed potato, minced garlic and salt into a firm, even dough. Shape it into flat oval cutlets about 1.5 cm thick, pressing them together well so they do not crack at the edges.
Coat
Make a thin flour and water paste. Dip each cutlet in the paste, then press it into the breadcrumbs to coat fully, and spray with oil. The paste glues the crumbs on so they crisp into a solid golden shell.
Preheat
Preheat the air fryer to 185C for a few minutes so the basket is hot. Lay the cutlets in a single layer without touching, which lets the hot air reach every side and brown them evenly.
Air fry
Cook at 185°C for 15 min, turning once halfway so both faces colour. The cutlets are done when the crust is crisp and deep golden all over and they feel firm, not soft, when pressed.
