Ingredients

  • moong sprouts2 cups
  • besan3 tbsp
  • ginger1 tsp grated
  • green chilli1 chopped
  • cumin powder1 tsp
  • oil1 tbsp

Method

  1. Coarse grind

Pulse the moong sprouts to a coarse paste without adding any water so the mix stays thick. A dry, thick mix binds into patties that crisp up rather than spreading and going soft in the basket.

  2. Bind the dough

Mix in the besan, ginger, green chilli, cumin powder and a little salt. The besan soaks up the moisture and holds the patties together so they keep their shape as they cook.

  3. Shape and brush

Form small flat patties and brush both sides lightly with the oil. An even film of oil helps them turn golden and crisp all over instead of drying out in dull patches.

  4. Air-fry until set

Lay the patties apart in a single layer and air-fry at 180°C for 15 min, turning once halfway, until firm and golden. Spacing them out lets the hot air reach every side so they crisp evenly.
