Ingredients
- chickpeas300 g cooked
- breadcrumbs60 g
- onion1 small
- cumin powder1 tsp
- coriander leaves2 tbsp chopped
- oil1 tbsp
- salt1/2 tsp
Method
Mash the chickpeas
Use cooked, well-drained chickpeas and mash them in a bowl, leaving some texture. A little coarseness gives the patties bite and helps them hold together, while a total mush would turn dense and pasty.
Mix the patty base
Add the finely chopped onion, breadcrumbs, cumin powder, coriander leaves and salt, then mix until it holds together. The breadcrumbs soak up moisture and bind the mix so the patties stay firm and do not crack.
Shape the patties
Divide the mixture into 6 equal portions and shape each into a flat patty, then brush both sides with oil. Even, flat patties cook through at the same rate, and the oil helps them brown into a golden crust.
Air fry
Place the patties in the basket without touching and air fry at 190°C for 14 min, flipping halfway, until firm and golden on both sides. The gaps let hot air crisp the edges, and flipping browns both faces evenly.
