Ingredients
- paneer250 g (cut into 4 thick slabs)
- curd3 tbsp (thick)
- ginger garlic paste1 tsp
- garam masala1 tsp
- red chilli powder1 tsp
- oil1 tbsp
- burger bun4
- onion1 (sliced into rings)
- capsicum1/2 (sliced)
- mint chutney4 tbsp
Method
Marinate the paneer
In a bowl mix the curd, ginger garlic paste, garam masala, red chilli powder and salt, then coat the paneer slabs well and rest for 10 min. Thick curd clings better and drives the spices into the paneer.
Air fry the paneer
Brush the basket with oil and lay the paneer slabs in a single layer, then air fry at 190°C for 10 min, turning once, until the edges are lightly charred. The oiled basket stops the slabs sticking and tearing.
Warm the toppings
Add the onion rings and capsicum slices to the basket for the last 3 min so they soften and pick up a light char. A short spell keeps them with some crunch rather than going fully limp and soft.
Assemble the burger
Toast the split buns in the air fryer at 190°C for 2 min until light golden. Toasting builds a dry, sturdy surface that holds up to the chutney without going soggy. Spread mint chutney, layer the paneer, onion and capsicum, then close and serve hot.
