Ingredients
- paneer300 g block
- olive oil2 tbsp
- smoked paprika1 tsp
- garlic paste1 tsp
- black pepper1/2 tsp
- salt3/4 tsp
Method
Cut the slabs
Slice the paneer block into 2 thick steaks about two fingers wide, then pat them dry with a clean cloth. A dry surface lets the spice rub grip and helps the slab sear to a golden crust instead of sweating.
Rub the spice
Mix the oil, paprika, garlic paste, pepper and salt into a rub, coat both faces of each slab and rest for 10 minutes. The rest lets the rub settle onto the paneer so the flavour is not just on the surface.
Preheat
Preheat the air fryer to 185°C, then lay the slabs in the basket with a little gap between them so hot air can move all around. A preheated basket sears the surface on contact for a better crust.
Air-fry and check
Flip the slabs once halfway so both faces colour evenly, and cook until the surface is golden and firm to the touch. A firm, springy feel means it is heated right through. Air-fry at 185°C for 14 min.
