Ingredients
- bread4 slices
- corn1/2 cup (boiled)
- capsicum1/4 (finely chopped)
- cheese1/2 cup (grated)
- mayonnaise2 tbsp
- black pepper1/4 tsp
- butter1 tbsp (softened)
Method
Mix the corn topping
In a bowl, mix the boiled corn, chopped capsicum, grated cheese, mayonnaise and black pepper until well combined. The mayonnaise binds the topping and keeps it creamy so it does not dry out under the hot air.
Prep the bread
Lightly butter one side of each bread slice and set the slices butter-side down. Buttering the base helps that side crisp evenly, so the toast turns golden underneath rather than staying soft and pale.
Pile on the topping
Spread the corn and cheese mixture evenly over the top of each slice, taking it right to the edges. Covering the corners stops them burning while the middle cooks and gives you crisp, cheesy edges all round.
Air fry until melted
Place the slices in the basket in a single layer. Air fry at 180°C for 7 min until the cheese is melted and golden and the bread edges are crisp. Serve hot while the topping is still soft and melty.
