Ingredients
- cauliflower1 large head
- cheese120 g, grated
- breadcrumbs3 tbsp
- olive oil3 tbsp
- garlic3 cloves, minced
- paprika1 tsp
- parsley2 tbsp, chopped
Method
Cut the steaks
Trim the leaves and slice down through the core into two or three thick steaks. Keeping part of the core on each slab holds the florets together, so the steaks stay whole instead of crumbling apart.
Season
Mix the olive oil with the minced garlic, paprika, salt and pepper, then brush it over both sides of each steak. Coating both faces helps the cauliflower brown evenly and carries the spice into every bite.
Roast then top
Air fry the plain steaks for the first ten minutes until they are tender and lightly browned. Then scatter over the cheese, breadcrumbs and parsley, so the topping crisps rather than burning during the long cook.
Air fry
Return the topped steaks to the basket and air fry at 185°C for 12 min, until a knife slides easily through the thick stem and the cheese crust is golden and bubbling. A soft stem means they are cooked through.
