Ingredients
- tofu350 g firm
- peanut butter2 tbsp
- soy sauce1 tbsp
- lime juice1 tbsp
- garlic paste1 tsp
- chilli flakes1/2 tsp
Method
Press the tofu
Press the tofu under a weight for 10 minutes to squeeze out the water, then cut into large cubes. Pressed tofu firms up and soaks in the peanut marinade, so the cubes hold together on the skewer.
Make the marinade
Whisk the peanut butter, soy sauce, lime juice, garlic paste and chilli flakes into a thick paste, loosening with a splash of water if needed. A clinging paste coats each cube in a rich, even layer.
Coat and thread
Toss the cubes in the marinade until well covered, then thread onto short soaked skewers. Soaking the skewers first stops them scorching, and gaps between cubes let hot air reach every side.
Air-fry to golden
Arrange the skewers in a single layer and air-fry at 180°C for 15 min, turning once, until the edges are golden and the tofu is heated through. Turning once colours both sides evenly.
