Ingredients

  • paneer200 g grated
  • boiled potato1 medium
  • grated carrot1/2 cup
  • besan3 tbsp
  • garam masala1 tsp
  • oil1 tbsp

Method

  1. Mix the dough

Combine the grated paneer, mashed potato, carrot, besan, garam masala and a little salt into a firm mix that holds its shape when pressed. The besan binds everything and soaks up moisture so the koftas won't crack open.

  2. Roll the koftas

Roll the mix into small, even balls and press each one gently between your palms so it stays round and smooth. Even-sized koftas cook at the same rate, and a smooth surface browns without cracks letting the filling out.

  3. Brush with oil

Brush the koftas all over with a light, even coat of oil. That thin film helps them crisp and turn golden in the dry heat instead of drying out, giving a crust closer to the deep-fried version without the extra oil.

  4. Air-fry and turn

Arrange the koftas apart in a single layer, leaving room between them, and cook until crisp and golden all over, turning once so every side browns evenly. Air-fry at 185°C for 17 min.
