Ingredients
- paneer250 g
- bbq sauce3 tbsp
- capsicum1
- onion1
- smoked paprika1 tsp
- oil1 tbsp
Method
Cut and skewer
Cut the paneer, capsicum and onion into even cubes and thread them onto skewers, alternating as you go. Keeping the cubes a similar size means they all cook at the same rate, so nothing chars while the rest is still raw.
Season
Brush the skewers all over with the oil and dust them with the smoked paprika. The light oil coat stops the paneer sticking and drying out, and helps the edges colour and pick up a gentle smoky note.
Air fry
Air fry the skewers at 190°C for 8 minutes. This first cook firms up the paneer and softens the capsicum and onion before the sauce goes on, so the glaze later can caramelise without the veg staying raw.
Glaze
Brush the BBQ sauce over the skewers on all sides, turning them as you go. Adding the sauce now rather than at the start stops the sugars in it from burning during the longer first cook.
Finish
Air fry at 190°C for 8 min, until the paneer is charred at the edges and the vegetables are tender. The final heat dries the sauce into a sticky glaze, so turn the skewers once so every side colours evenly.
