Ingredients
- paneer250 g
- urad dal2 tbsp
- red chilli4
- sesame seeds1 tbsp
- garlic4 cloves
- curry leaves1 sprig
- oil1 tbsp
Method
Make the podi
Dry roast the urad dal, red chilli, sesame seeds, garlic and curry leaves until fragrant, then grind to a coarse powder with salt. Roasting first wakes up the oils so the podi tastes deep and nutty.
Coat the paneer
Brush the paneer cubes lightly with oil, then roll them in the podi until well coated on every side. The thin oil layer helps the dry podi stick so it toasts into a crust.
Preheat and arrange
Preheat the air fryer to 180°C. Place the paneer cubes in a single layer with space between them so the hot air circles each piece and dries the crust evenly.
Air fry
Air fry at 180°C for 10 min, turning once, until the podi crust is dry and toasted and the paneer is lightly golden. Turning keeps every side crisp instead of soft on the bottom.
