Ingredients
- paneer300 g in strips
- yogurt1/2 cup
- flatbread3
- garlic3 cloves minced
- paprika1 tsp
- onion1/2 cup sliced
Method
Make the marinade
Mix the yogurt, garlic, paprika and a pinch of salt, then coat the paneer strips and onion and rest for 10 min. The yogurt tenderises the paneer and helps the spices cling so the flavour soaks right in.
Lay out the strips
Spread the marinated paneer and onion in a single layer so the pieces are not stacked. Stacked strips steam and stay pale, but in one layer the hot air reaches each one and chars the edges.
Warm the bread
In the last 2 min, lay the flatbread on top of the paneer to warm and soften it. A quick warm-up makes the bread pliable, so it folds around the filling without cracking or tearing.
Crisp and wrap
Air fry at 190°C for 18 min, shaking once, until the paneer edges are golden and lightly charred. Shaking part-way browns all sides. Pile the paneer and onion into the warm flatbread and roll it up.
