Ingredients
- paneer250 g
- tortilla4
- onion1
- chili powder1.5 tsp
- yogurt2 tbsp
- garlic2 cloves
Method
Marinate
Cut the paneer into strips and mix with the yogurt, chili powder and crushed garlic, then rest for 10 minutes. The yogurt clings to the paneer and carries the spice in, keeping it soft and well seasoned as it cooks.
Air fry the paneer
Air fry the paneer with the sliced onion at 185°C for 10 minutes, shaking once, until lightly charred and hot through. Shaking midway chars the edges evenly and softens the onion without letting anything stick or burn.
Roll
Spoon the spicy paneer and onion onto a warm tortilla in a line down the middle. Fold in the sides and roll it into a tight cylinder. A warm tortilla is more bendy, so it rolls up snugly without cracking.
Crisp to finish
Air fry the roll at 185°C for 5 min until the tortilla is crisp and golden and the filling is steaming hot. The quick blast seals the seam and crisps the outside, so the roll holds together when you pick it up.
