Ingredients
- tofu350 g firm
- hung curd1/2 cup
- tandoori masala1 tbsp
- capsicum1 cubed
- onion1 cubed
- oil1 tbsp
Method
Press and cube
Press the tofu for 10 minutes under a weighted plate to force out the water, then cut it into large cubes. Well-pressed tofu holds the marinade and firms up nicely instead of falling apart when you turn it in the basket.
Whisk the marinade
Mix the hung curd, tandoori masala, oil and a little salt into a thick, clingy coating. Using hung curd rather than runny yoghurt keeps the marinade dense so it sticks to the tofu and vegetables instead of dripping away.
Coat everything
Fold the tofu cubes, capsicum and onion through the marinade until every piece is well covered, then rest for 15 minutes. The rest lets the spices settle in and the salt draw flavour into the vegetables before cooking.
Air-fry to char
Spread the pieces in a single layer with a little space between them and cook until the edges char and the tofu is heated right through, turning once so both sides brown evenly. Air-fry at 190°C for 16 min.
