Ingredients
- paneer250 g
- kathi masala2 tbsp
- yogurt2 tbsp
- paratha4 pieces
- onion1 medium
- capsicum1 small
- green chutney2 tbsp
Method
Marinate the paneer
Cut the paneer into strips and coat them with the yogurt and kathi masala, then rest for 15 minutes. The yogurt softens the paneer and helps the masala grip, so the flavour reaches past just the surface.
Air fry the paneer and onion
Spread the marinated paneer, onion and capsicum in the basket and air fry at 190°C for 10 minutes, shaking once, until the edges look lightly charred. Shaking moves the pieces so they colour on all sides.
Warm the parathas
Lay the parathas in the basket and air fry at 180°C for 3 minutes until warm and slightly puffed. A short warm-up makes them soft and foldable, so they roll around the filling without cracking.
Assemble the kathi rolls
Spread green chutney over each warm paratha, add the air-fried paneer filling in a line and roll it up tight. Keep the filling to the centre so the roll seals shut and nothing slips out of the ends.
Final crisp
Set the rolls seam-side down in the basket and air fry at 180°C for 3 min until the outside turns lightly crisp and golden. Seam-side down first fixes the join with heat so the roll stays closed.
