Ingredients
- cauliflower400 g florets
- flour60 g
- water100 ml
- garlic powder1 tsp
- paprika1 tsp
- hot sauce2 tbsp
- oil1 tbsp
Method
Make the batter
Whisk the flour, water, garlic powder and paprika into a smooth, thick batter. Aim for one that coats the back of a spoon, since too thin and it slides off the florets, too thick and it bakes into a heavy, doughy shell.
Coat and air fry
Dip each floret into the batter, let the excess drip off and lay them in a single layer in the basket. Air fry at 195°C for 12 min, shaking once, until the coating is set and lightly crisp all over.
Toss in sauce
Mix the hot sauce and oil in a large bowl, then add the air-fried florets and toss to coat evenly. The little bit of oil loosens the sauce so it clings in a thin, glossy layer rather than soaking the crust soft.
Air fry again
Return the coated florets to the basket and air fry at 195°C for 5 min. This second blast dries the sauce onto the coating so the wings turn sticky and crisp on the outside rather than wet.
