Ingredients
- pizza dough1 ball
- mozzarella cheese70 g
- pizza sauce2 tbsp
- capsicum1 small
- sweet corn3 tbsp
- olive oil1 tsp
Method
Cut the dough
Roll the pizza dough out to an even thickness and cut it into four equal squares. Keeping the dough the same thickness throughout means each pocket bakes through at the same rate without any thick, doughy patches.
Add filling
Place a little pizza sauce, mozzarella, chopped capsicum and sweet corn on one half of each square. Go easy on the filling and keep it to one side, since an overfilled pocket bursts open and leaks as it cooks.
Fold and seal
Fold each square over into a triangle and press the edges firmly with a fork to seal them shut. Brush the tops with olive oil. A tight fork-crimp keeps the filling sealed inside while the oil helps the pockets brown.
Air fry
Air fry at 180°C for 11 min until the pockets are golden and crisp outside and the dough is cooked right through, with no doughy, raw patch in the middle. Let them cool a minute before biting, as the filling stays very hot.
