Ingredients
- semolina1 cup
- curd3/4 cup
- onion2 tbsp, finely chopped
- tomato2 tbsp, finely chopped
- coriander leaves1 tbsp, chopped
- saltto taste
- oil1 tsp
Method
Make the batter
Mix the semolina with the curd and a splash of water into a thick, pourable batter, then rest it for 15 minutes. The rest lets the semolina swell and drink in the curd, giving soft, fluffy bites instead of hard, gritty ones.
Prepare toppings
Stir the chopped onion, tomato and coriander leaves together in a small bowl with a pinch of salt. Keeping the topping ready and lightly salted means the vegetables release a little flavour and sit evenly on each bite.
Fill the moulds
Grease the silicone moulds or a shallow tray with a little oil, pour in the batter, and scatter the vegetable topping over each portion. The oiled moulds stop the bites sticking so they turn out cleanly with a browned base.
Air fry until set
Cook at 180°C for 18 min. The bites are done when the top is firm to the touch and a toothpick pushed into the centre comes out clean with no wet batter clinging to it. Let them cool briefly before lifting out.
