Ingredients

  • Thick poha (flattened rice)1.5 cups
  • Boiled potato2
  • Green peas & carrot1/2 cup
  • Cumin & chaat masala1.5 tsp
  • Breadcrumbs1/3 cup

Method

  1. Soak the poha

Rinse the thick poha briefly and let it sit for 5 minutes until just softened, then drain well. Excess water makes the cutlets fall apart, so squeeze gently if needed.

  2. Mash and mix

Combine the softened poha with mashed potato, peas, carrot, cumin, chaat masala and salt. Mash until the mixture is cohesive but still slightly textured.

  3. Rest the dough

Let the mix rest for 10 minutes so the poha swells and binds everything together. This makes shaping far easier and reduces cracking.

  4. Shape and coat

Form oval cutlets and roll each in breadcrumbs for an extra-crunchy shell. Press firmly so the crumbs adhere all over.

  5. Brush with oil

Lightly brush or spray both sides with oil for even browning. A thin, uniform coat is all that is needed in the air fryer.

  6. Air-fry until golden

Air-fry at 190C for 13 minutes, flipping once, until crisp and golden on both sides. Serve hot with tamarind or mint chutney.
