Ingredients
- rolled oats1 cup
- ripe banana1, mashed
- milk3/4 cup
- honey2 tbsp
- cinnamon powder1/2 tsp
- baking powder1/2 tsp
- chopped walnuts2 tbsp
Method
Mash the banana
Mash the banana in a bowl until mostly smooth with just a few small lumps. A well-mashed banana spreads its sweetness through the whole mix and helps bind the oats so the bake holds together.
Mix the batter
Stir in the oats, milk, honey, cinnamon and baking powder to make a loose batter. Let it be a little runny, as the oats drink up the milk while baking, and a stiff mix would come out dry and dense.
Pour and top
Pour the batter into a greased ramekin and scatter the walnuts over the top. Spreading the nuts on top keeps them crunchy and lightly toasted, rather than going soft if they were stirred through the batter.
Air Fry
Air fry at 170°C for 14 min until the centre is set and the top is golden. Press the middle gently, as it should feel firm and spring back, not wet, which tells you the oats have cooked right through.
