Ingredients

  • oats1 cup
  • banana1 mashed
  • curd1/2 cup
  • milk1/4 cup
  • baking powder1/2 tsp

Method

  1. Blend the oats

Grind the oats to a coarse flour in a blender, then mix in the mashed banana, curd and milk until you have a smooth batter. Grinding the oats first gives the bites a soft, cake-like crumb instead of a rough, chewy one.

  2. Add the rise

Stir in the baking powder and let the batter rest for 5 minutes before cooking. That short rest lets the oats swell and the baking powder start to work, so the bites puff up light and airy rather than staying flat and dense.

  3. Fill the cups

Spoon the batter into greased silicone cups, filling each about two-thirds of the way. Leaving that space at the top gives the batter room to rise as it sets, so the bites dome up nicely instead of overflowing.

  4. Air fry

Air-fry at 170°C for 14 min, until the bites are set right through and spring back when you press them lightly. That gentle bounce is the sign they are cooked in the centre and ready to lift from the cups.
