Ingredients

  • banana2 medium, mashed
  • chia seeds2 tbsp
  • rolled oats3/4 cup
  • milk1/2 cup
  • cinnamon powder1/4 tsp

Method

  1. Soak the chia seeds

Mix the chia seeds with the milk in a small bowl and let them sit for 10 minutes until the mixture turns thick and gel-like. The soaked seeds swell and bind the bake, so it sets firm instead of staying loose.

  2. Mash and mix

Mash the bananas in a large bowl until smooth, then stir in the soaked chia mixture, rolled oats and cinnamon powder. Mix into a thick batter. The ripe banana adds natural sweetness and helps it bind.

  3. Pour into a dish

Grease a small round baking dish that fits your air fryer basket. Pour in the batter and spread it level with the back of a spoon, so it cooks evenly and the top browns at the same rate all across.

  4. Air fry until firm

Preheat to 170°C, then air fry at 170°C for 16 min until the top is set and golden and a skewer pushed into the centre comes out clean. Let it cool a little so it firms up before you slice it.
