Ingredients
- broccoli2 cups chopped
- cheese1/2 cup grated
- breadcrumbs1/2 cup
- flour2 tbsp
- milk3 tbsp
Method
Steam the broccoli
Steam or microwave the chopped broccoli for 2 minutes until just soft, then chop it fine. Cutting it small helps the bites bind and hold together, and lets each one cook through evenly in the basket.
Make the mix
Combine the broccoli, cheese, breadcrumbs, flour, milk and a pinch of salt into a mix that just holds together. If it feels loose, add a little more breadcrumb so the bites keep their shape.
Shape the bites
Press the mix firmly into small balls or patties so they do not crumble apart. Place them in a greased basket with a little space between each, which lets the hot air crisp every side.
Preheat
Preheat the air fryer to 180C for 3 minutes so the basket is hot before the bites go in. Starting in a hot basket sears the outside quickly and helps it turn crisp rather than dry.
Bake
Bake at 180°C for 15 min, turning once halfway so both sides colour. They are ready when the outside is golden and firm to the touch and holds together when you lift one out.
