Ingredients

  • tortilla2
  • potato2 medium, boiled and mashed
  • green peas2 tbsp, boiled
  • garam masala1/2 tsp
  • onion1 small, chopped
  • cheese2 tbsp, grated

Method

  1. Make the masala potato

Mash the boiled potato in a bowl while it is still warm, as it mashes smoother then. Add the peas, garam masala, chopped onion and salt and mix well into an even filling with no big lumps to poke through the roll.

  2. Air fry the filling

Spread the potato mix in a small air fryer safe tray and air fry at 180°C for 5 min until warmed through with lightly golden edges. This dries the filling out a little so the finished roll is not damp inside.

  3. Fill the tortilla

Lay the tortilla flat and spoon the filling in a line down the centre, leaving the edges clear. Sprinkle over the cheese, then roll up tightly and tuck the ends in. Melting cheese acts like glue and holds the roll shut.

  4. Crisp the roll

Place the roll seam side down in the basket so it seals as it cooks. Air fry at 190°C for 8 min, turning once, until golden and crisp. The tortilla should feel firm to the touch, which means it will hold together when sliced.
