Ingredients

  • semolina (sooji/rava)1 cup
  • curd1/2 cup
  • bread4 slices
  • onion2 tbsp, finely chopped
  • green chilli1, chopped
  • coriander leaves1 tbsp, chopped
  • oil sprayfor the basket

Method

  1. Make the batter

Whisk the semolina with the curd, a little water, onion, green chilli, coriander and salt into a thick, spreadable batter. Rest it for 10 min so the semolina softens and swells, which stops the topping from tasting raw or gritty.

  2. Spread on bread

Spread a thick, even layer of the batter over each bread slice, right up to the edges. Covering the corners fully stops them from drying out and curling, and the even layer crisps into a uniform golden top.

  3. Arrange in basket

Place the slices batter side up in the basket and spray them lightly with oil. The thin film of oil helps the semolina topping brown into a crisp, golden crust instead of drying out pale and hard on top.

  4. Air fry until golden

Air fry at 190°C for 9 min until the semolina topping is fully set, golden and crisp at the edges with no wet batter left in the middle. A firm, dry top tells you the toast is cooked right through.
