Ingredients

  • ragi flour1 cup
  • banana1 medium, mashed
  • curd1/4 cup
  • jaggery powder2 tbsp
  • baking powder1/2 tsp

Method

  1. Mix the dough

In a bowl, combine the ragi flour, mashed banana, curd, jaggery powder and baking powder into a soft, thick dough. The mashed banana and curd add moisture and natural sweetness while helping the dense ragi come together smoothly.

  2. Rest the dough

Cover the dough and let it rest for 10 minutes before shaping. Resting lets the ragi flour drink up the moisture and swell, so the dough is easier to shape and the baked bites turn out soft rather than dry and crumbly.

  3. Shape the bites

Divide the dough into small balls and gently flatten each one between your palms into a thick disc. Keeping them evenly thick means they bake through at the same time, so none stay doughy while others firm up.

  4. Air fry until baked through

Place the bites in the basket, spaced apart so air moves between them, and air-fry at 170°C for 14 min. They are ready when firm to the touch and a skewer pushed into the centre comes out clean.
