Ingredients
- bread4 slices
- paneer150 g, grated
- capsicum1/4 cup, finely chopped
- onion2 tbsp, finely chopped
- green chutney2 tbsp
- chaat masala1/2 tsp
- butter1 tbsp, softened
Method
Mix the filling
Mix the grated paneer, capsicum, onion, chaat masala and a pinch of salt into a coarse, even filling. Grating the paneer rather than cubing it helps the filling pack down flat so the sandwich does not fall open.
Assemble the sandwich
Spread green chutney on one side of each bread slice, then divide the paneer filling over half of them and close into sandwiches. Spread the filling to the edges so every bite has flavour, not just the middle.
Butter the outsides
Butter the outer faces of each sandwich lightly and evenly. That thin layer of butter is what browns the bread into a crisp golden crust in the dry heat of the air fryer.
Air fry until crisp
Air fry at 190°C for 8 min, flipping halfway so both sides colour. The sandwich is ready when the bread is golden and crisp and the paneer filling is warm all the way through.
