Ingredients

  • sabudana (tapioca pearls)1 cup, soaked
  • potato1, boiled and mashed
  • peanuts3 tbsp, roasted and crushed
  • green chilli1, chopped
  • coriander leaves2 tbsp, chopped
  • lemon juice1 tsp
  • oil sprayfor the basket

Method

  1. Soak the Sabudana

Soak the sabudana in just enough water to barely cover it for 4 hours or overnight, then drain well. You want each pearl soft enough to squash between two fingers but still separate, because extra water makes the vadas fall apart.

  2. Mix the Dough

Mix the drained sabudana with the mashed potato, crushed peanuts, green chilli, coriander, lemon juice and salt into a sticky dough. The potato and crushed peanuts bind the pearls together so the patties do not crack open.

  3. Shape the Vadas

Wet your hands and shape the mix into small flat patties about 2 inches wide. Damp hands stop the sticky dough clinging to you, and keeping the patties thin and even helps the centre cook before the outside over-browns.

  4. Air Fry Until Golden

Set the patties in the basket and spray both sides well with oil so they crisp like the fried version. Air fry at 190°C for 15 min, flipping halfway, until the crust is golden and crisp and the centre is cooked through, not sticky.
