Ingredients

  • Rolled oats1 cup
  • Ripe banana1, mashed
  • Milk1/2 cup
  • Maple syrup2 tbsp
  • Baking powder1 tsp
  • Mixed berries1/3 cup

Method

  1. Blend the base

Blitz the oats, mashed banana, milk, maple syrup and baking powder into a smooth, pourable batter. A short blend breaks down the oats so the cups bake soft and cake-like instead of staying gritty and coarse.

  2. Fill the cups

Spoon the batter into greased silicone muffin cups, filling each about three-quarters full to leave room to rise. Press a few berries into the top of each so they stay put and do not sink to the bottom.

  3. Rest the batter

Let the filled cups sit for 5 minutes so the oats soak up the liquid and the baking powder starts to bubble. This softens the oats and gives a lighter, more risen cup once it bakes.

  4. Air-fry until set

Cook at 175°C for 16 min until the tops spring back to a light touch and a toothpick comes out clean. Let them cool a couple of minutes before lifting out, as warm cups are soft and hold their shape better once firm.
