Ingredients
- bread4 slices
- jam4 tbsp
- butter2 tbsp, softened
- milk1 tbsp
Method
Prepare the bread
Flatten each bread slice with a rolling pin until thin and pliable. Pressing the crumb tight makes the slice fold without cracking and helps the two edges stick, so the jam stays sealed inside instead of leaking out.
Fill with jam
Spread the jam over one half of each slice, keeping it away from the edges. Brush the border with a little milk, then fold the bread over and press down firmly; the milk acts as glue and seals the pocket shut.
Butter the outside
Brush the outside of each pocket all over with softened butter. The butter is what browns the bread into a crisp, golden shell in the dry heat, and it also stops the surface from drying out and going tough.
Air fry
Air-fry at 180°C for 8 min, flipping once, until the pockets are golden brown and crisp on both sides. Let them cool for a minute before biting, as the jam inside turns very hot and can scald.
